Strawberry Rhubarb Soda

1 stalk rhubarb, chopped
1 cup strawberries, chopped
1/4 cup sugar
2 cups water
1/4 cup active ginger bug
Directions
- Chop your strawberries and rhubarb, add to a pot, followed by sugar and 3/4 cup water.
- Simmer for 10-15 mins. Let cool to room temperature before filtering out the pulp using a strainer.
- Add strawberry rhubarb syrup into a swing top bottle.
- Add your ginger bug and fill the rest of your bottle with water (around 1 1/4 cup water).
- Let ferment at room temperature for 1-2 days. This ferments really quickly!!! So be sure to burp your bottles every day and refrigerate before opening.
- OPEN VERY CAREFULLY AS FRUIT MAKES FERMENTATION VERY ACTIVE!
